What is the difference between infrared and probe temperature measurement?

The infrared sensor measures the surface temperature of an object without making contact, while the penetration probe measures the internal temperature of food. Infrared is useful for quick surface checks, but a penetration probe should be used when an internal food temperature is required for food safety.

Is the Thermapen® IR suitable for HACCP and food safety checks?

Yes. The Thermapen® IR is suitable for professional temperature monitoring as part of HACCP and food safety procedures. The infrared function enables quick surface temperature checks, while the penetration probe can be used to check the internal temperature of cooked, chilled and reheated foods.

How accurate is the Thermapen® IR?

The penetration probe is accurate to ±0.4 °C between -49.9 and 199.9 °C, and ±1 °C outside this range. The infrared sensor is accurate to ±1 °C between 0 and 100 °C, and ±2 °C or ±2% of the reading outside this range, whichever is greater.

How quickly does the Thermapen® IR measure temperature?

The penetration probe provides internal temperature readings in just three seconds, making it suitable for quick, routine temperature checks in busy commercial food environments. The infrared function provides rapid, non-contact surface temperature measurements.

How close should the Thermapen® IR be to the surface being measured?

The Thermapen® IR has a 5:1 distance-to-target ratio, meaning the area being measured becomes larger as you move further away from the target. For the most accurate infrared readings, position the thermometer as close to the surface as practical.

What is emissivity on the Thermapen® IR?

Different surfaces can give different infrared readings depending on their material and finish. The emissivity setting helps the Thermapen® IR account for these differences to improve measurement accuracy. It is set to 0.95 by default and can be adjusted between 0.1 and 1.0 for different surfaces.

Does the Thermapen® IR come with a calibration certificate?

Yes. The Thermapen® IR is supplied with a free traceable calibration certificate, providing documented confirmation of its accuracy. Additional calibration options are available for businesses with specific quality or compliance requirements.
